Do you love all things LEMON and recipes that take little time? If yes, this recipe is for you!! These cookies have amazing lemon taste and are FAST to whip up. These are cake mix cookies so there are only FOUR easy ingredients needed to make them. Dive in!

INGREDIENTS

- 1 pack Lemon cake mix

- 2 large eggs

- 1/2 cup vegetable oil

- 1 cup powdered sugar


DIRECTIONS

1. Preheat oven to 350 degrees. Line baking sheets with parchment paper and set aside.

2. Place the eggs and vegetable oil in a large bowl and whisk until combined. Sift cake mix into the egg mixture to break up any large clumps. Mix until all of the dry ingredients are moistened and a dough forms.

3. Pour the powdered sugar into a shallow bowl. Scoop the dough into 2 tablespoon portions and form into balls. Toss the balls gently in the powdered sugar until completely and generously coated. Arrange on the prepared baking sheets - about 12 per sheet.

4. Refrigerate until cool to the touch, 15 to 20 minutes. If the cookies absorb the powdered sugar, roll in the powder again to coat.

5. Bake until the cookies are set, about 10 minutes. Let the cookies cool on the baking sheets for 2 minutes. Transfer the cookies to wire cooling racks and cool completely.


**I also used this recipe but substituted the lemon cake mix for red velvet, strawberry, and devils food cake mixes to make different flavors of crinkle cookies!

I finally got to bake a batch of my favorite cookies today! They are OH SO GOOD! You won’t be able to resist these amazingly awesome peanut butter cookies! Treat yourself and try out this recipe!


PEANUT BUTTER COOKIE RECIPE:


 

Ingredients:

• 1/2 cup Crisco all-vegetable shortening

• 3/4 cup Jif®️ creamy peanut butter

• 1 1/4 cups Light brown sugar

• 3 Tbsp Milk

• 1 Tbsp Vanilla

• 1 Egg

• 1 3/4 cups All-purpose flour

• 3/4 tsp salt

• 3/4 tsp baking soda


Directions:

1. Heat oven to 375 degrees.

2. Combine shortening, peanut butter, brown sugar, milk, and vanilla in a large bowl. Beat at medium speed until well blended. Add egg. Beat until just blended.

3. Combine flour, salt, and baking soda. Add to the creamed mixture at low speed. Mix just until blended.

4. Roll the dough into 1 inch balls and place 2 inches apart onto an ungreased baking sheet. Flatten slightly in crisscross pattern with a fork.

5. Bake at 375 for 7 to 8 minutes, or until just beginning to brown. Don’t overbake. Cool 2 minutes on the baking sheet, then move cookies to cooling rack.

Happy Thursday! It's been a CRAZY past couple of weeks. I guess you could say we are running low on homemade treats in our house! With that being said, I have been craving homemade Peanut Butter Cookies - they are definitely on my list for things to bake this weekend. And, if I'm feeling ambitious, I might also try to tackle that homemade REESES recipe I've been dying to make! Stay tuned for some super yummy, peanut-buttery recipes!
